Thankfully, they created a winner that time around.<\/p>\n<p>Fast forward two years, and I've used the creamy cauliflower-cashew base from that soup recipe to create everything from other soups (<a href=\"https:\/\/www.blissfulbasil.com\/vegan-cream-of-broccoli-soup\/\">cream of broccoli<\/a> + <a href=\"https:\/\/www.blissfulbasil.com\/vegan-cream-of-celery-soup\/\">cream of celery<\/a>\u00a0+ <a href=\"https:\/\/www.blissfulbasil.com\/vegan-creamy-cauliflower-mushroom-soup\/\">cream of mushroom<\/a>), to <a href=\"https:\/\/www.blissfulbasil.com\/vegan-creamy-spring-pea-asparagus-pasta\/\">pasta<\/a>\/<a href=\"https:\/\/www.blissfulbasil.com\/easy-vegan-spinach-alfredo-lasagna\/\">lasagna<\/a> sauces, and even <a href=\"https:\/\/www.blissfulbasil.com\/vegan-creamy-potato-casserole\/\">casseroles<\/a>.<\/p>\n<p>Each has been a hit with you all, and you know I aim to please. But don't let its 8- to 10-person serving size deter you if you're cooking for one or a small group\u2014you can freeze any extras to keep on hand for a speedy reheat-able appetizer.<\/p>\n<p>To make the cauliflower-cashew cream base, you'll start by boiling four cups of fresh or frozen cauliflower florets with two-thirds of a cup raw cashews.<\/p>\n<p>While the cauliflower and cashews boil, you'll saut\u00e9 chopped artichokes, shallots, and garlic in a bit of olive oil.<\/p>\n<p>Once the veggies soften and\u00a0<em>just<\/em>\u00a0begin to caramelize, you'll add a bit of dry white wine to deglaze the pan and add depth of flavor to your in-the-making dip.<\/p>\n<p>Once the cauliflower is fork-tender, add it and the cashews to a high-speed blender along with filtered water, nutritional yeast flakes, lemon juice, sea salt, and black pepper.<\/p>\n<p><img class=\"alignnone size-full wp-image-28353\" src=\"https:\/\/www.blissfulbasil.com\/wp-content\/uploads\/2017\/11\/Creamy-Cauliflower-Wild-Rice-Soup-9818.jpg\" alt=\"Vegan Creamy Cauliflower Wild Rice Soup\" width=\"680\" height=\"1020\" srcset=\"https:\/\/www.blissfulbasil.com\/wp-content\/uploads\/2017\/11\/Creamy-Cauliflower-Wild-Rice-Soup-9818.jpg 680w, https:\/\/www.blissfulbasil.com\/wp-content\/uploads\/2017\/11\/Creamy-Cauliflower-Wild-Rice-Soup-9818-200x300.jpg 200w\" sizes=\"(max-width: 680px) 100vw, 680px\" \/><\/p>\n<p>Blend on high for about two minutes, or until you have a super smooth, velvety cream.<\/p>\n<p><img class=\"alignnone size-full wp-image-28354\" src=\"https:\/\/www.blissfulbasil.com\/wp-content\/uploads\/2017\/11\/Creamy-Cauliflower-Wild-Rice-Soup-9822.jpg\" alt=\"Vegan Creamy Cauliflower Wild Rice Soup\" width=\"680\" height=\"1020\" srcset=\"https:\/\/www.blissfulbasil.com\/wp-content\/uploads\/2017\/11\/Creamy-Cauliflower-Wild-Rice-Soup-9822.jpg 680w, https:\/\/www.blissfulbasil.com\/wp-content\/uploads\/2017\/11\/Creamy-Cauliflower-Wild-Rice-Soup-9822-200x300.jpg 200w\" sizes=\"(max-width: 680px) 100vw, 680px\" \/><\/p>\n<p>Add that beautiful cauliflower-cashew cream to the pan with the artichokes, shallots, and garlic.<\/p>\n<p>Reduce the heat, partially cover to prevent splashing, and simmer for 20 minutes, or until the sauce thickens. You'll want to stir every five minutes or so to prevent scorching.<\/p>\n<p>Next, carefully fold in about five ounces of chopped baby spinach, (or baby kale if you prefer a more robust flavor) and continue to simmer until it wilts.<\/p>\n<p>Turn off the heat. Taste.
