Traditions surrounding food, gatherings, practices, and so on.<\/p>\n<p>In our family, we celebrate the holidays at my mom and step dad's home each year. My mom's entire family comes over on Christmas day, including her four siblings and their kids (my cousins) and their kids' kids.<\/p>\n<p>Years ago, my mom would prepare each and every dish herself, but as time's unfolded, she's taken a more relaxed pot-luck approach to feeding an ever-growing crowd.<\/p>\n<p>As the tradition currently stands, she prepares vegetarian lasagna, my grandma prepares meat lasagna, and the aunts, uncles, and cousins bring an array of other dishes, ranging from veggie-laden salads to rolls, cookies, and pies.<\/p>\n<p>Since going vegan, I've been charged with the task of bringing a crowd-pleasing plant-based main dish each year.<\/p>\n<p>Given the Italian\/lasagna theme, you'd think a vegan lasagna would have been my trusty go-to right from the get-go, but I'd been intimidated by the idea until now.<\/p>\n<p>Why?<\/p>\n<p>Most of the vegan lasagna recipes I've made in the past have either been incredibly labor intensive (we're talking 3\u20134 hours of active kitchen preparation), or they've been a little dry and lackluster in the flavor department.<\/p>\n<p>So, instead of lasagna, I'd leaned on dishes like lentil loaves, mostaccioli (recipe in <a href=\"https:\/\/www.amazon.com\/Blissful-Basil-Plant-Powered-Vibrancy-Happiness\/dp\/1942952457\/refa=sr_1_1?ie=UTF8&amp;qid=1462395511&amp;sr=8-1&amp;keywords=blissful+basil\" target=\"_blank\" rel=\"noopener\">my cookbook<\/a>), or <a href=\"http:\/\/ohsheglows.com\/2013\/11\/13\/lentil-mushroom-walnut-balls-with-cranberry-pear-sauce\/\" target=\"_blank\" rel=\"noopener\">these<\/a> tasty lentil mushroom walnut balls. All of which are delicious and festive, however, this year I set my sights on creating a dish that would fit in with my family's lasagna tradition.<\/p>\n<p>But there were a few rules I kept in mind as I tested and tasted my way to the very recipe you see here.<\/p>\n<p><strong>I wanted this lasagna to be:<\/strong><\/p>\n<p>Easy to make.<\/p>\n<p>Transportable and perfect for pot-luck celebrations.<\/p>\n<p>A simple, go-to sort of vegan lasagna that could easily be dressed up and modified to suit a variety of seasons, events, and taste preferences.<\/p>\n<p>Nourishing (think: hidden veggies)\u00a0<em>and<\/em> satisfying to vegans and non-vegans alike.<\/p>\n<p><strong>So, here you have it. An easy vegan spinach alfredo lasagna that ticks all of the above boxes...<\/strong><\/p>\n<p><img class=\"alignnone size-full wp-image-28253\" src=\"https:\/\/www.blissfulbasil.com\/wp-content\/uploads\/2017\/11\/Easy-Vegan-Spinach-Alfredo-Lasagna-9641.jpg\" alt=\"Easy Vegan Spinach Alfredo Lasagna\" width=\"680\" height=\"1020\" srcset=\"https:\/\/www.blissfulbasil.com\/wp-content\/uploads\/2017\/11\/Easy-Vegan-Spinach-Alfredo-Lasagna-9641.jpg 680w, https:\/\/www.blissfulbasil.com\/wp-content\/uploads\/2017\/11\/Easy-Vegan-Spinach-Alfredo-Lasagna-9641-200x300.jpg 200w\" sizes=\"(max-width: 680px) 100vw, 680px\" \/><\/p>\n<p>This lasagna requires a short and simple list of ingredients\u2014just 9 ingredients plus water, salt + pepper\u2014and it's incredibly tasty.<\/p>\n<p>Store-bought marinara (or homemade if you're feeling fancy) and spinach cauliflower-cashew alfredo sauce are layered with ribbons of lasagna noodles and baked to perfection.<\/p>\n<p><strong>Let's take a closer look at the methods...<\/strong><\/p>\n<p>You'll start by making the cauliflower-cashew alfredo sauce.<\/p>\n<p>Boil two cups of Earthbound Farm's Organic Cauliflower (about \u00bd a medium head chopped into small florets) until fork-tender.<\/p>\n<p><img class=\"alignnone size-full wp-image-28243\" src=\"https:\/\/www.blissfulbasil.com\/wp-content\/uploads\/2017\/11\/Easy-Vegan-Spinach-Alfredo-Lasagna-9575.jpg\" alt=\"Easy Vegan Spinach Alfredo Lasagna\" width=\"680\" height=\"1020\" srcset=\"https:\/\/www.blissfulbasil.com\/wp-content\/uploads\/2017\/11\/Easy-Vegan-Spinach-Alfredo-Lasagna-9575.jpg 680w, https:\/\/www.blissfulbasil.com\/wp-content\/uploads\/2017\/11\/Easy-Vegan-Spinach-Alfredo-Lasagna-9575-200x300.jpg 200w\" sizes=\"(max-width: 680px) 100vw, 680px\" \/><\/p>\n<p>Then, add the boiled cauliflower to a high-speed blender along with a bit of filtered water, raw cashews, nutritional yeast flakes (add a rich and cheesy flavor reminiscent of parmesan), apple cider vinegar, sea salt, and black pepper.<\/p>\n<p>Blend on high for two minutes, or until you have a silky smooth and creamy sauce, and then set the sauce aside while you get to work on the spinach.<\/p>\n<p>Add a bit of olive oil and several cloves of minced garlic to a large saut\u00e9 pan. Top with a layer of gluten-free lasagna noodles (or regular if you prefer). Spread about half of the alfredo sauce over the lasagna noodles and top with a bit more marinara. Repeat until you have three full layers of noodles, topping the final layer with marinara only.<\/p>\n<p>Cover the lasagna with foil and bake for 30 minutes. Then, remove the foil, sprinkle with a bit of vegan parmesan (optional but recommended), and continue to bake for another 20 minutes, or until the lasagna is hot and bubbly.<\/p>\n<p>Remove the lasagna from the oven and let it rest for about 5 to 10 minutes. I recommend a combination of saut\u00e9ed mushrooms, zucchini, red peppers, and yellow squash.<\/p>\n<p>I hope this lasagna recipe brings both simplicity and joy to your holiday
