I originally set out in search of inspiration for photos\u00a0of\u00a0a standard size cheesecake with berries, but none of that mattered once I laid eyes on\u00a0Dana's mini\u00a0<a href=\"http:\/\/minimalistbaker.com\/7-ingredient-vegan-cheesecakes\/\" target=\"_blank\" rel=\"noopener noreferrer\">7-Ingredient Vegan Cheesecakes<\/a>.<\/p>\n<p style=\"padding-left: 30px;\">I immediately clicked through to the recipe (my mouth likely\u00a0agape)\u00a0and was awestruck by the fresh, clean, and stunning blog that appeared before my eyes.<\/p>\n<p>It's\u00a0unlikely this is your first time hearing about\u00a0<a href=\"http:\/\/minimalistbaker.com\/\" target=\"_blank\" rel=\"noopener noreferrer\">Minimalist Baker<\/a>\u00a0but on the off chance it is, do your eyes and your appetite a solid and check it out asap.\u00a0Ever since that first magical brush with Dana's drool-worthy, approachable recipes and playfully captivating photography style, I've been hooked. And I did a little dance\u00a0when I caught wind that a Minimalist Baker cookbook was in the works.<\/p>\n<p>Cookbooks are one of the few things I collect, and this one was destined to be (and is)<em>\u00a0<\/em>a\u00a0keeper.\u00a0As the title promises, it's packed with plant-based, mostly gluten-free recipes that are\u00a0simple\u00a0to make and absolutely delicious. The recipes are clear, concise and easy to follow and the photos are stunning.\u00a0It also has practical tips, tricks, and resources that are great for anyone who's just stepping into the world of plant-based cooking\/baking. Stumped by flax \"eggs\" and soaked cashews? Don't worry 'bout a thing, Dana's got your back.<\/p>\n<p>The only difficult thing was choosing which recipe\u00a0to make first. It was a lengthy, four-way tug of war, and\u00a0The Best Vegan Enchiladas ultimately prevailed.
