Why is it so fantastic? Great question.<\/p>\n<p>1| It lures in the flavors of whatever sauces and seasonings it's cooked alongside.<\/p>\n<p>2| It's a great way to sneak in another serving or two of veggies.<\/p>\n<p>3| It can be enjoyed in large quantities without inducing a post-meal yawn fest.<\/p>\n<p>4| It cooks up quicker\u00a0than brown rice (aka my grainy go-to).<\/p>\n<p>For this version, you'll start by heating a bit of olive oil and garlic in a pan. Then, you'll rice a large head of cauliflower florets by hand (with a grater) or by pulsing them in a food processor to create a rice-like consistency. Toss the cauliflower \"rice\" into the pan along with some tiny-cut broccoli florets and saut\u00e9 until tender and just turning golden.<\/p>\n<p><img class=\"alignnone size-full wp-image-13250\" src=\"https:\/\/www.blissfulbasil.com\/wp-content\/uploads\/2015\/05\/157A4281.jpg\" alt=\"Cheesy Broccoli Cauliflower Rice | An ultra-cheesy , protein-packed &quot;rice&quot; that's vegan, gluten-free, and grain-free!\" width=\"683\" height=\"1024\" srcset=\"https:\/\/www.blissfulbasil.com\/wp-content\/uploads\/2015\/05\/157A4281.jpg 683w, https:\/\/www.blissfulbasil.com\/wp-content\/uploads\/2015\/05\/157A4281-200x300.jpg 200w, https:\/\/www.blissfulbasil.com\/wp-content\/uploads\/2015\/05\/157A4281-360x540.jpg 360w, https:\/\/www.blissfulbasil.com\/wp-content\/uploads\/2015\/05\/157A4281-180x270.jpg 180w\" sizes=\"(max-width: 683px) 100vw, 683px\" \/><\/p>\n<p>While the \"rice\" is saut\u00e9ing, you'll make a protein-packed, nut-free hemp seed cheddar cheese sauce. Trust me when I say this sauce is\u00a0magical. Smooth, slightly tangy, and high in\u00a0complete protein thanks to the hemp seeds.\u00a0I'm a bit obsessed with it, so you'll probably see it being repurposed in other recipes over the next few months. Nachos, casseroles, sandwiches, oh my.<\/p>\n<p>To make it, you'll add hemp seeds, water, roasted red peppers, nutritional yeast, arrowroot powder, apple cider vinegar (or another acid -- lemon juice, white wine vinegar, etc.), and sea salt to a blender. Blend on high until you have a smooth, orange-hued\u00a0liquid. Pour into a saucepan, heat over medium, and stir constantly for about 5 minutes or until thickened.<\/p>\n<p><img class=\"alignnone size-full wp-image-13252\"
